Tater tots casserole


Recipe

  • 2lb bag tater tots
  • 2 cans of veggie soup
  • 1 bell pepper chopped
  • 2 carrots shredded
  • 4 oz vegan cream cheese
Mix all except the tots together. Grease two 9 inch baking pans. Split the tots between both pans. Pour the soup mixture between both pans. Bake at 450 for 30 to 40 minutes or until its warm in the middle. 

This was so tasty that everyone has seconds. I wanted to make this with tortilla soup, but the store was out. I found some veggie soup that was vegan and gluten free. Just a heads up a lot of soup has milk, wheat, or meat broth. Check the labels.
